Happy Mardi Gras! Yes, today is the day to celebrate with your purple, yellow, and green beads and delicious New Orleans foods. There’s so many different options you have to munch on during Mardi Gras that it’s almost impossible to pick and choose.
But there’s one food I’ve been dying to eat Gluten Free and it’s not jambalaya…
A few weeks ago, I received the most delicious healthy and gourmet trail mix from Sticky Nuts. Many of their ingredients are organic and what I loved most about their trail mix is that normally when you get trail mix from the store it’s not too healthy, it contains gluten or soy, they all have the same boring ingredients, and you don’t really get a lot of nuts.
Sticky Nuts puts grocery store trail mix to shame. I tried all of their delicious flavors:
- PB Fig
- Morning Grapefruit
- Choco Spice
- Asian Fusion
- Winter Wonder (seasonal and you can get it right now!)
I wasn’t so sure about the Asian Fusion or the Morning Grapefruit just because I was worried the Asian would somehow taste like sesame and soy sauce – I have no idea why, but I’m not a fan of either. And I was worried the grapefruit would be too citrusy for me because, to tell you the truth, I tend to avoid anything citrus as much as possible, I’m just not a big fan.
Boy, was I wrong. The Asian and Grapefruit blends actually ended up being some of my favorite flavors, though it was so hard to decide between them all! They have these amazing pieces for dried fruit and the asian fusion even had some dried lentils that were delicious!
Of course, Choco Spice was the absolute best. I love chocolate and I love a little bit of heat in everything I make so the chocolatey, spicy, cinnamoney (totally not a word, but I’m using it) mix was amazing.
All of this tasting and testing got me to thinking… what if I made a doughnut that had Sticky Nuts as the topping. Oh that would be so deliciously good.
Then I saw Mardi Gras coming up on my calendar and I knew that for this Donut Day, I’d be munching on yummy gluten free doughnuts!!
This recipe is:
- Dairy Free
- Fish Free
- Gluten Free
- Shellfish Free
- Soy Free
- Peanut & Tree Nut Free if you make these plain WITHOUT the Sticky Nuts and use regular milk or apple juice instead of the almond milk :)

Sticky Nuts Winter Wonderland Mini “Beignet” Recipe
Makes approx 3 dozen mini doughnuts
Prep Time: 20min / Fry Time: 20min
Ingredients:
- 1/4c almond or coconut milk or apple juice, warmed to approx 120-130F (I just warm it in the microwave for 30-60sec)
- 1/2 packet yeast
- 4 large eggs
- 2tbsp brown sugar
- 1tsp salt
- 1tsp baking soda
- 3/4c sweet rice/sorghum flour
- 1c white rice flour
- 3/4c tapioca starch
- 3/4c potato starch
- Oil, for frying
- 1c sugar
- 2tbsp cinnamon
- 4tbsp agave or honey
- 1/2c Sticky Nuts Winter Wonderland mix, chopped
In a small bowl, combine the warmed milk or apple juice and yeast. Set aside to rise and foam. This will take approx 10min.
In a large bowl whisk the eggs, brown sugar, salt, and baking soda. Slowly add in the flour and the yeast, mixing until completely combined and kneading with your hands until slightly sticky.
Fill a medium saute pan with approx. 1/4″ of oil and heat over medium. On a medium plate combine the 1c sugar and cinnamon for rolling your beignets in after frying. In a small bowl combined the honey and Sticky Nuts.
Roll the dough into 1″ balls and then flatten. Place in the hot oil for approx 1-2min on each side until browned. Immediately remove from oil and roll in the sugar and cinnamon. Top with the honey and Sticky Nuts mixture. Serve.
These were so delicious and though they weren’t traditional New Orleans Beignets, they’re great in my book

All of the Sticky Nuts look and sound delicious! For me it’s a toss up between the grapefruit and the Choco Spice blend. I think I’ll have to go for the Choco. How can you go wrong with Cocoa, nuts and cherries? YUM
All the Sticky Nuts blends look so good. I think I want to try the Winter Wonder mix the most though. I love cardamon and how can you go wrong with candied ginger and orange rind?
