mac cheese small {Party Menu & Recipe Alert} Get Ready for the Big Game with Mini Mac & Cheese Bites!!I’m not a football fan at all. In my Spinach & Artichoke Dip recipe a few weeks ago I’m pretty sure I told you that.

But hell, I’m a huge foodie and I love me some wings, dips, and super yum appetizers. So the excuse to pig out on every bad fattening food is always welcome.

It can be hard to decide what exactly to make for your super bowl party, so I’ve thrown together a list of what I’m making so it can give you some idea of what you can make for your party, even if you’re not having anyone over and it’s just you and your family or a close friend.

For me, it’s just going to be Adam and I and we’re going to eat wayyy too much food and have wayy to many leftovers, but that’s okay…

That’s about it.. no desserts because for me super bowl is all about salty, cheesy, gooey, yummy snacks! And now for the appetizer treat of the day. I absolutely love these completely allergy free mini Mac & Cheese bites.

Now on the the recipe!

This Recipe Is:

  • Egg Free
  • Fish Free
  • Gluten Free
  • Peanut Free
  • Shellfish Free
  • Soy Free
  • Tree Nut Free
  • Vegan

mac cheese {Party Menu & Recipe Alert} Get Ready for the Big Game with Mini Mac & Cheese Bites!! Allergy Free Mini Mac & Cheese Bites

Ingredients:

  • 1lb gluten free pasta (Quinoa or Brown Rice pasta is my fav)
  • 1c Mozzarella Daiya Cheese
  • 1c Cheddar Daiya Cheese
  • 1tbsp rice milk
  • 1tsp black pepper
  • Paprika, to garnish

Preheat oven to 350F. Boil your pasta as per the instructions.

While pasta is cooking, in a medium pot over medium, combine your cheeses, milk, and black pepper. Stir until completely combined and melted.

When your pasta is finished, drain and place in a large pot or bowl. Top with your melted cheese mixture, combining. Spoon into greased silicon cupcake pans (approx 1/4c of mac & cheese into each cupcake pan – don’t use paper liners because the mac & cheese will stick), or you can spoon into a greased cupcake pan though you’ll need to cool a bit before serving because it’s harder to remove without it breaking apart.

Dust with paprika. Bake for 15-20 min. Remove and serve!

To serve these yummy treats, I actually make them in a regular sized silicon cupcake molds (I don’t have mini one – what am I thinking?) so if you want super mini mac & cheese cups, use a mini pan greased or mini silicon cupcake molds!
