I can’t tell you the last time I had a fish stick. Not only because they’re typically filled with unhealthy bad-for-you fish and preservatives, but because they’re rarely ever gluten free.
So I decided it was about time Adam and I enjoyed our own gluten free and grease free version of the dish. I don’t think, even if I could, that I would go back to your normal boring fish sticks after trying this recipe. These were simple to make and were so delicious. Fresh fish really does make all the difference.
Luckily, I had a box of Kinnikinnick panko style gluten free bread crumbs which are PERFECT for making fish and chips (so much better than your typical bread crumbs). I added a few of my own seasonings and went at it. Before I move onto the recipe, I just have to tell you how GOOD Kinnikinnick’s panko bread crumbs are.
You can pick them up at your local grocery store, on Amazon (though, as always, on Amazon you have to buy in bulk), or on Kinnikinnick’s website.
When I became gluten free, I didn’t think I would ever find another panko bread crumb again and I thought my days of eating my favorite Panko Breaded Chicken Curry that Adam taught me about after his escapades in Japan when he was in the Marines were over. One day I’ll have to also share that recipe with you (it’s seriously so simple and to die for), but today, we’re snacking on fish and chips!
This recipe is simple and doesn’t take a ton of time, which is a total bonus – the cook time for the fish is only 10minutes and they’re coming out of the oven flaky, warm, and delicious. I also posted my “chip” recipe below which is also really simple just in case you have never made your own fries in the oven…
This Fish Stick Recipe Is:

- Peanut Free
- Shellfish Free
- Soy Free
Gluten Free Fish Sticks
| Serves | 3 |
| Prep time | 20 minutes |
| Cook time | 10 minutes |
| Total time | 30 minutes |
Ingredients
- 1lb White Fish (Your choice of fish)
- 2 large Eggs
- 2 cups Kinnikinnick Panko Gluten Free Bread Crumbs (Depending on how much you coat your fish sticks, you may need more)
- 1 tablespoon Garlic Powder
Directions
| Step 1 | |
| Preheat your oven to 350F. Spray a large baking sheet or with olive oil and set aside. In a medium bowl, whisk your eggs until combined. | |

| In another medium bowl combine your bread crumbs and garlic powder. | |
| Step 3 | |
| Rinse and pat dry your fish and cut into 1" thick strips. Dip each strip first into the egg and then into the bread crumbs. Set on your baking sheet, ensuring none of the fish pieces are touching. | |

| Once you have breaded all of your fish sticks, place in the oven and bake for 10min. | |

| Remove and serve! | |

As for the chips, you’re going to need a few potatoes. To serve Adam and I, I usually cut up about 3 large red potatoes as you can see in the recipe below, because I don’t want to be eating any more starches than that and then I ensure we don’t have any leftovers. I actually use the same recipe when I make breakfast potatoes, but instead of cutting the potatoes in a fry shape, I dice them. Instead of cooking them on a baking sheet, I put them in a large pan with a little oil and sometimes butter and cook them over Medium to Medium/Low (I use stainless steel pans for everything so if you use non-stick you may want to cook closer to Medium temperature).
Now, on to the recipe!
Baked Red Potato Fries

| Prep time | 15 minutes |
| Cook time | 25 minutes |
| Total time | 40 minutes |
Ingredients
- 3 medium Red potatoes (Cut into long thin fry shaped strips approx 2)
- 4 tablespoons Olive Oil
- Salt & Pepper (To Taste)
Directions
| Step 1 | |
| Preheat your oven to 425F. | |
| Step 2 | |
| In a large bowl combine your cut potatoes, olive oil, and salt and pepper. Toss to coat. | |
| Step 3 | |
| Spray a baking sheet with olive oil and spread out your potatoes evenly, so none are touching each other. | |
| Step 4 | |
| Bake for approx 25-30min, or until soft and browned. Removing your potatoes after 10 min to flip. | |
| Step 5 | |
| Remove and serve! | |

Hey Lauren–Veganaise makes a great substitute for eggs when breading stuff.
