peppermint oreo bark 300x203 {Recipe Alert} Super Easy Chocolate Peppermint BarkEvery year during the holidays I like to make cookies to give away to people like my landlord, the woman who delivers  my mail, friends, some family… you get the drift.

When you make so many cookies like I do (especially complicated allergy free cookies), sometimes you need something simple that takes about 10 minutes to make but is so delicious that no one notices the difference!

My favorite allergy free recipe to make and to add in with all the yummy cookies I send to everyone, is chocolate peppermint bark. Adam loves to snack on it and I think he misses it a bit when I pack it all up and send it out for others to enjoy.

Only 5 ingredients are needed and most of the time, I have these things around the house during the holidays anyway so I don’t have to run out and grab anything additional if I want to make additional batches last minute.

  • Fish Free
  • Gluten Free
  • Peanut Free
  • Shellfish Free
  • Soy Free
  • Tree Nut Free

Chocolate Peppermint Bark

Ingredients:

  • 12oz allergy free dark chocolate chips (Enjoy life is my go-to here).
  • 12oz allergy free white chocolate chips
  • 1tsp peppermint extract
  • 5 candy canes, crushed (you can do this with a rolling pin or in a food processor)
  • 6 allergy free oreo cookies, crushed (Glutino makes delicious allergy free oreo cookies, but they’re not soy free. If you don’t have luck finding soy free oreos, chocolate wafers will work too!)

Melt the dark chocolate over the stove in a small saucepan. While the chocolate is melting, prepare a large baking sheet by topping with parchment paper.

Once the chocolate is completely melted, spread out evenly onto the parchment paper with a spatula. The chocolate should be approx 1/8″ thick. Place the entire sheet in the refrigerator to cool. Once the dark chocolate has cooled and hardened, remove from the fridge and start melting the white chocolate over the store in a small saucepan.

When the white chocolate is completely melted, add in the peppermint extract and stir to combine. Spread the white chocolate on top of the hardened dark chocolate evenly using your spatula. The dark chocolate will begin to melt underneath so you’ll want to do this quickly.

Next, heat your oven to 250F and sprinkle the candy canes and oreos on top of the chocolate, pressing in with your hands. Place the entire pan in the oven for about 5-7min so the entire thing melts again and you can be sure the white and dark chocolate will stick together.

Take the pan out of the oven and press the candy canes and oreos into the chocolate one last time to make sure they will stick.

Place in the fridge to cool completely and break into squares using a large knife. Eat and enjoy!
