Okay… so it’s been some time since you’ve received an email or post from me. A whole WEEK!
If you’re getting this via email and it looks different than normal, then it’s because I’ve made a few changes on the site which I’ll talk about below too…
If you follow me on Facebook you probably already know why I haven’t written in a week, but let me fill you in just in case you missed the news… oh, it’s so exciting!
As I was wedding dress shopping two Fridays ago (yes, I bought a dress this past Friday — but I went on my own to get it haha), I got a very, very exciting and life changing call that I will be moving all the way across the country for work!
Yep, from Philadelphia to Seattle. There it is… my trip I’ll be making soon. It’s a longggg, longgg drive. It will probably take us about 4 days if we drive 12 hours a day.

I can’t even express through this post how freaking excited I am.
The crazy thing is that Adam and I will be leaving in a week and a half, so we don’t exactly have much time. We’ve been planning to move out to the Pacific Northwest for the past, oh, I don’t even know how long and it’s finally happening! I think I’m most excited though about the drive out there.
I’ve always wanted to drive across the country and one of my top goals in life is to see all 50 states before I turn 30, which is only a few years away…
On the trip I’m DEFINITELY, no doubt about it going to see Mt. Rushmore. That is a complete must and I have wanted to see the amazingness of it for I can’t even tell you how long. Oh and there’s gluten free Chicago deep dish pizza mixed in there, cheese from Wisconsin, The Corn Palace in South Dakota (I think it’s there?!) and a few other things.
If you live in any of the many states we’re going to pass though, PLEASE tell me if there’s anything off RT 90 easily accessible we should see because I totally want to see everything on the way out even though we don’t have much time. I know I can do it haha
Did I ever tell you about my vacay up the New England Coast a few summers ago? It was the last vacation I took before I found out I had to cut gluten out of my diet. So it was the last time I could eat a buttery lobster roll (yeah, I like the butter ones) and crab cakes mmm. Anyway, we did all of the states from PA up to Maine in 10 days. I think we can do this.
So on May 3rd we’re going to pack up everything we own (well, minus all the stuff we’ve already sold on Craigslist – I didn’t know everything would go so fast and now we have almost nothing in our apartment haha). Get in our big 16′ truck towing our car, head to a wedding on the 5th, and then finally leave on the 6th.
But wait, there’s more!
Then we’re going to drive all the way across the country and hopefully arrive on the 10th, unpack, get a little settled, then FLY BACK, yes you heard that right, FLY BACK here. We have a Red Hot Chili Peppers concert we have VIP tickets to and then Adam graduates the 13th!!!
After that, we fly back to our new home in Seattle right after Adam graduates on the 13th with kitty in tow (hope she makes it in the flight okay, I’m so worried) and I start work the 15th. WHEW! This is going to be a whirlwind May for me.
I think the next few weeks from today until the 15th when I start my new job I will be a little crazy so wish me luck!
Which brings me to why the emails have changed and why I didn’t post so much this week.
Since things have been super crazy I’ve decided that YES, don’t worry, I will still be writing, but until May has settled and we’re back into the swing of things, it may be sporadic and I may not cover the topics on the normal days I used to so it will be a mix of everything I normally talk about and of course lots of food.
I have some recipes I’ve made and which are ready for you so don’t worry because I def won’t be cooking much in the next couple weeks or taking good photos since my house is torn apart!
The emails have changed to fit my new lifestyle. I still want you to visit the site, but the way they’re set up now is the only way I can get the emails to schedule themselves and go out on their own without my tweaking, which takes a lot of time! So please read the posts like normal and head to the site by clicking on the Continue Reading button to leave me comments and just to visit and say Hello.
Of course, I am most definitely going to try to document my trip across the country and all of the amazing allergy and gluten free foods I come across, which is another reason the posts may be sporadic.
I’m not sure how often I’ll be able to access the Internet and I’m not sure how much time or how tired I’ll be every day, but I want to at least try and post a little something even if it’s just a Hello and here’s a picture of me at Mt. Rushmore. That kind of stuff.
Stay tuned because it’s going to get fun and exciting and I promise things will all go back to normal in May. I’ll miss you in the meantime and try to post as often and regular as possible, after all, next month is Celiac Awareness Month and there are a LOT of gluten free goodies (and giveaways) I want to share with you.

P.P.S. If you have any tips at all for flying with animals please let me know. I’m a newbie at this and am worried Mika will get sick or anxious. She gets sick whenever we drive!
